Ramadan Pita recipe: Costs 2.5 Turkish Lira
Lecturer Elif Zeynep Özer, stating that pita, one of the indispensable items of Ramadan tables, can be made at home as delicious as the ones bought from bakeries, shared the tips of making Ramadan pita at a cost of 2.5 lira. Özer also gave a recipe for Ottoman sherbet.
With the month of Ramadan, the pita queues in bakeries has started. “Instead of waiting for pita in queues by going beyond the social distance rules during the coronavirus epidemic, it is possible to make healthy, delicious and economical Ramadan pita at home and make it ready minutes before iftar” said Elif Zeynep Özer and shared the recipe for Ramadan pita and Ottoman sherbet. Özer said, “It is possible to make Ramadan pita easily at home and its cost is quite affordable. 1 pita costs 2.5 lira. It contains only flour, salt, yeast and water. We used tamarind, bay leaf, cinnamon and cloves in Ottoman sherbet. A glass of the sherbet costs 1 lira.”
THE TRICK FOR RAMADAN PITA: 'WAITING'
Expressing that it takes about 2.5 hours to make Ramazan pide at home, but only 15 minutes is spent on processing the dough, Özer said the key point is to wait for the fermentation period. It is also important to use bread flour if you want to achieve a firm pita taste.
Özer shared the recipe of the pita:
For pre-fermentation; 1 package or 10 grams of instant (dry) yeast, 1 dessertspoon of sugar or 1 dessertspoon of honey, 5 heaped dessertspoons of sifted flour, half a dessertspoon of salt, half a glass of warm water. After mixing all the ingredients, we have to ferment the dough for an hour at a non-cold ambient temperature.
For the main dough; We make the main dough by mixing 5-6 glasses of sifted flour, 2.5 glasses of warm water, half a dessert spoon of salt, and we add the dough we obtained in the pre-fermentation process and make it homogeneous. Then we cover the dough with cling film and let it rest for 1 hour in a warm environment.
For the top of pita; 2 egg yolks, 2 teaspoons of grape molasses, black cumin, sesame.
After the main dough rest for a while, shape the circumference and inside of the pita with our fingertips. Then, mix the egg yolk and molasses and spread on it. Then, add black seed and sesame seeds. In order to capture the full flavor of the pita, before shaping the pita, sprinkle bran on the floor or the floor where the pita will be cooked and place the pita on it. Bake the pita in a preheated 190 degree oven for 18 minutes until the top is browned.
USEFUL FOR DIGESTION, CAN BE STORED FOR 1 MONTH IN A FRIDGE, 6 MONTHS IN A FREEZER
Sharing the recipe of Ottoman sherbet known as healthy and beneficial for digestion, Özer said, “Concentrated form can stay in the fridge for about 1 month. Ottoman sherbet; balances stomach acid. It is beneficial for the digestive system and intestines. However, just as each food harms our health when consumed too often and too much; Excessive consumption of sherbet can likewise disrupt the health balance. People who use blood thinners need to be a little more sensitive and careful. "It is a beverage that can give us a soda refreshment in a much healthier way."
From Gastronomy and Culinary Arts Department in Istanbul Gelisim University, Inst. Elif Zeynep Özer said, “Use tamarind (Indian date palm), bay leaf, cinnamon and cloves in Ottoman sherbet. In 1 liter of boiled water, put 200 grams of tamarind, 1 cinnamon, 5 cloves and 1 bay leaf in pieces, 1 glass of sugar. You can diversify this mixture by adding foods such as fresh ginger and anise according to your taste perception. You can add honey instead of sugar into them, if desired. When refined sugar is not used, an average of 4-5 tablespoons of honey can be added as the equivalent of 1 glass of refined sugar and mixed and sweetened after the sherbet loses its heat. The cost of this refreshing sherbet consumed cold is also quite affordable. By adding 1 more liter of water to 1 liter of Ottoman sherbet we obtain, we obtain 8 glasses of sherbet. "Each glass is equivalent to 1 lira."
